Food can be made more durable by deep frying / drying. This process removes the water that is necessary for the survival of micro-organisms, and is used in the production of potato crisps, potato flakes or potato chips.
Apart from the “traditional frying” under conventional atmospheric conditions we have a special vacuum fryer. Our fine Terra Chips are produced on this appliance: the slices are fried in the vacuum. Thanks to this gentle process the resultant products are of excellent quality.
